Description
Ingredients
| 1 | T | extra virgin olive oil |
| 1 | onion (finely chopped) | |
| 2 | clv | garlic (finely chopped) |
| 4 | Aidells Sun-Dried Tomato Sausage (chopped) | |
| 1/2 | c | roasted red peppers (chopped) |
| 1/4 | c | fresh basil leaves (finely chopped) |
| 6 | large eggs | |
| 2 | c | half and half |
| 6 | oz | provolone cheese (grated) |
| freshly ground black pepper, to taste |
Instructions
In a large sauté pan over medium heat, add the oil and sauté the onions and garlic until translucent, about 5 minutes. Add the sausage, peppers and half of the basil; stir to combine. Spread sausage mixture into a buttered 13x9x2-inch glass or ceramic baking dish.
In a large bowl, whisk together the eggs, half and half, and half of the cheese. Season with pepper. Pour over the sausage mixture in dish and sprinkle the remaining cheese and basil over the top. Bake until golden brown and knife inserted into center comes out clean, about 30-40 minutes. Let stand 10 minutes before serving.
