1pkAidells Chicken and Apple Sausage (diced into bite-sized pieces)
2 15-ounce cans black beans, drained
1 15-ounce can diced tomatoes in juice
1cfrozen corn
2 15-counce cans pumpkin puree
1Tcurry powder
1 1/2tground cumin
  cayenne pepper, salt and sugar to taste


Valerie Zaryczny from Dearborn, MI landed a Runner-Up prize in our 2005 Recipe Contest Main Dish category for this delicious stew recipe. Its earthy, exotic flavors make us think of East Indian cooking, but the ingredients are available at your local grocery store. Try this recipe with one of our spicier sausages like Habanero & Green Chile for a little extra kick.


In a soup pot over medium heat add the oil and saute the onions for 5 minutes. Stir in the broth, sausage, black beans, tomatoes, corn, and pumpkin and bring to a boil. Reduce heat to medium low and stir in milk, curry and cumin. Simmer for 10 minutes. Season to taste with cayenne, salt and sugar.

Absolutely wonderful. Compliment after compliment. Makes alot so good for leftovers as well. Even colleagues smelling the microwave asked for the recipe. As good as it gets!

I accidentally added an extra


I accidentally added an extra can of tomatoes but it was perfect!! Definitely a great winter warm up stew but, it is so good I would eat it anytime!

This was delicious! I substituted heavy cream for the milk 3 cups of homemade pumpkin puree for the 2 cans. The heavy cream was the kicker. Yum!

Fabulous! We like spicy in our home, so I added about 1 1/2 tsp of Cayenne Pepper... This is a keeper recipe!!!
